Blissful Banana Bread

For all these hungry little monkeys who love their bananas!
One other eggless recipe so that you can attempt. At our home, our daughter’s job is to mash the bananas (so you might find yourself with lower than you began!).

3 ½ oz (100 g) butter, softened, plus just a little extra for greasing
5 oz (140 g) caster sugar
8 oz (225 g) all-purpose flour
2 teaspoons baking powder
3 very ripe bananas
50 ml milk
2 pound can of bread


  1. Preheat oven to 180C (350F) / 170C fan / gasoline model 4.
  2. Grease the loaf pan with just a little butter. Cowl the bottom with parchment paper and grease this as effectively.
  3. In a big bowl, combine collectively the butter and sugar, then slowly combine the flour and baking powder. Peel and mash the bananas. Now combine all the pieces collectively and add the milk final (relying on the dimensions of your bananas, you could not want as a lot milk if the combination is moist sufficient).
  4. Pour your combination into the pan and bake for 1 hour or till a skewer comes out clear. Let the banana bread cool on a wire rack earlier than eradicating it from the pan.
